Chicken Salad is a great way to use up left-over chicken. You can eat it on bread, on a salad or by itself.
Often, after I make a chicken based soup I have half a cooked chicken left-over. This is a tasty way to make the chicken into something else in about 5 minutes.
What you need:
2 cooked chicken breasts cubed (or half a chicken cooked)
1/2 a medium sized red onion chopped
~2-3 tablespoons of mayonnaise
salt and pepper to taste
**Extras that you can add in that taste great: a few chopped grapes, 1/2 a cucumber chopped, 1 stalk of celery chopped, 2 pieces of cooked bacon chopped, or try with a few shakes of curry powder. Also you could chop up half an apple to stir into your salad, and cut the other half as wedges to dip in the salad instead of bread (or to be a decoration--squirt a little lemon juice on the wedges to slow their browning).
To actually make the chicken salad, all you need to do is mix together all your chopped ingredients and stir in the mayo. Don't leave globs of mayo! Stir evenly. Really the mayo acts as the glue for this dish.
