Summerfest Spinach Calzone

Okay, maybe I made up Summerfest. If you're using fresh veggies in this calzone, you too will think it deserves a holiday. Picture munching on this while running all over the map for the Midsummer festival. Yum!



What you need:
1 Handful of frozen or fresh Spinach. If you are using the frozen, cook it in the microwave for 2 minutes and squeeze out some of the water--or else you will have a soggy calzone.

2 Big tablespoons of Ricotta Cheese
1 clove of Garlic minced.
1/3 Onion sliced into strips
Small handful of shredded mozzarella cheese

If you have other veggies on hand, like Bell Pepper, Fresh Tomato, or Black Olives put some in to your calzone.
**Oregano, Basil and/or parsley to shake on the top

If your store carries fresh herbs, or you grow your own, be sure to use them in this dish.

Step 1. Preheat the oven to 450

Step 2. Roll out the pizza dough, and stack the ingredients in a long row in the center of your dough.

Step 3. Roll like a burrito.

Step 4. With a sharp knife slice a few vents on the top of your calzone.

Step 5. Brush the surface with a little olive oil and sprinkle the seasonings.

Step 6. Cook on a cookie sheet at 450 for about 15 minutes.

**Optional** Dip in some Nubsauce or Ranch. Yum!

  1. cut the mozz down and add feta, dill, and this becomes a great greek treat!!!
