Burrito Style Enchiladas

Enchilada sauce is so delicious, but traditional corn tortilla enchiladas can be difficult to eat at your desk, especially if you would like to eat them one-handed. So, to help solve the messy drip, I like to use flour tortillas, and roll the enchiladas into a burrito.



What you need:
1 lb ground beef or shredded chicken, browned (takes about 5-8 minutes in the skillet)
1 can of enchilada sauce (At the bottom of the post I will mention the recipe to make your own, but the canned stuff is fine. I just like to add some cayenne.)
1 package of burrito sized flour tortillas
1 to 1-1/2 cups of shredded cheddar cheese
**Optional** Add some cayenne pepper to the sauce if you'd like it spicier.

You can also make these vegetarian friendly, by using more cheese and no meat. Add spinach, and/or mushrooms to taste.

Step 1. Brown your ground beef or chicken. Drain out the excess grease when the meat is finished cooking.

Step 2. Add the sauce to the meat and let it simmer on low heat for 5-10 minutes. Stir occasionally.

Step 3. Fill the center of your tortilla with the meat and cheese.

Step 4. Roll your burrito.

Step 5. Rinse the skillet, and turn the stove temperature to high. Grill the burrito to make the tortilla slightly brown.

**Optional** If you don't mind the extra sauce, bake the enchilada-burritos at 350 for 10-12 minutes, with sauce underneath and on top of your enchiladas. Add some cheese too if you'd like!



**Tip** Double the recipe, and freeze your left over burrito-style enchiladas. They're so much tastier than Hot-Pockets! :) Just, reheat them for 3-4 minutes in the microwave, or until the center is hot.

Enchilada Sauce:
1 can of unseasoned tomato sauce
1/4 cup chili powder
1 to 1-1/2 cups of water
Cumin, Cayenne Pepper, Garlic Powder, and Salt to taste (about 1/4-1/2 teaspoons of each).
To thicken, add 1-2 tablespoons of flour or corn starch.

Steps. Just heat in a sauce pan for about 10 minutes on medium-low heat. Stir every few minutes.

  2. I tried to make this today, but noticed a lack of onions, chicken (or beef) or pretty much anything. You can make a similar meal with
    Sausages, chopped fairly small, carmalised onions, tomato paste, etc. Improvise!
    Also, I mixed the cheese into the sauce while it was heating, and stuck the whole lot onto some toast - no enchillada wraps.
    Also, you can use a jar of salsa instead of the enchillada sauce - makes for a really nice thick sauce.
