Traditional American Combo Hero

Move over Peter Parker, there is a new hero in town! Okay, maybe it is not that kind of hero, but for a tasty sandwich pick this one is sure to please.

What you need:
2 Slices of thinly sliced Roast Beef
2 Slices of thinly sliced Turkey (Roasted, Smoked, Peppered…you choose!)
2 slices of thinly sliced Ham
2-3 slices of American Cheese
1 hero roll (If your grocery store does not carry these rolls, cut about 6 inches from a loaf of fresh French bread.)

Dressing: Typically this will have mayo on one side and spicy brown mustard on the other side of the bread.

If you cannot figure out how to make a sandwich with just the ingredients, then you fail. If you can (I am keeping my fingers crossed) then enjoy this one. XD

Monster Veggie Wraps!

Mmm…muenster cheese! I named these for some kids who’d order these at a deli I worked in and couldn’t remember “muenster.” Eating your veggies never tasted better, and this recipe was kid tested!

What you need:
3-4 slices of your favorite deli cheese. I like mixing 2 slices of Muenster Cheese with 1-2 slices of Pepper Jack!
2 slices of tomato
A few rings of raw onion
1 piece of Romaine or green leaf lettuce (you can substitute this with raw spinach)
3-4 slices of cucumber
1 small can of sliced black onions (add to taste)
**If you have other veggies like peppers in your fridge, those would be great in here too!
1 flavored wrap (these come in many flavors, I recommend the spinach, sun-dried tomato, and wheat flavors)

Dress it up with a scoop of honey-mustard, Italian dressing, Ranch or Guacamole!

Step 1. Slightly lower than the center of the wrap, put your dressing on the wrap directly.
Step 2. Place 2 slices of cheese next to each other making a rectangle, and add the other slice or two stacking them on top.
Step 3. Add your veggies.
Step 4. Roll the wrap, and cut in half.

**If you are having trouble rolling the wraps, check out my post on how to roll them easily.

Meat Loaf--Prep this in just 5 minutes!

Meatballs are a favorite dish, but they need to be watched and turned when they cook. They also can take a considerable amount of time to roll each ball. So instead of meatballs, I recommend this meatloaf recipe. It’s easy, fast to make and has a lengthy cook time so most of you won’t burn it if you get stuck for a few extra minutes at your computer.

For example, if you’re sitting in Dalaran waiting for WG to start, the 5 minute preparation time is easy to squeeze in and the loaf will bake during the battle—providing that the other faction doesn’t just run away scurred…sissies!

What you need:
1.5 lbs of ground beef
1/2 can of Italian spiced tomatoes (drain the juice out). Save the rest for another recipe!
1 egg (not cooked, scrambled)
1.5-2 cups of Italian seasoned breadcrumbs
1/2 medium size onion minced (If you want your prep time reduced, you can use dried minced onions.)
2 squirts of ketchup

Preheat the oven to 350.

Step 1. Mix all of the ingredients in a large bowl. Use your hands, as you will have to get them dirty when you shape the loaf. Blend all the ingredients into the meat so that the surface is no longer gritty from the breadcrumbs. This is the bulk of the prep time for the meat loaf. It will only take about 30 seconds to a minute to shape and stick into the oven!

Step 2. Shaping the loaf. Roll the mix into a ball to make sure all the meat sticks together. Shape it like half a football, but do not over-thin the ends and do not flatten the top. Really you can have fun and shape this in different ways, but try to keep it at a pretty thick and consistent height so that the ends do not cook too much faster than the middle.

**Note** Some recipes call for you to use a greased bread loaf pan. This works if you want your loaf to be rectangular in shape, and the slices squared.

Step 3. Place the loaf on a pan (a sheet of foil on the pan makes clean-up a cinch!), and put on a middle rack in the oven. Bake at 350 for 1 hour.

Since this has a long cook time, you will have plenty of time to finish WG and possibly get some dailies finished. Remember to set in-game timers if you want to be reminded when it’s been about an hour.

When finished your meatloaf should be browned, and you can test the center of the loaf to make sure that it is cooked through. Let it sit for 5 minutes before you slice.

**Tips** If your mixture seems to moist to roll, add some more breadcrumbs. If it seems dry and gritty, add some more of the canned tomatoes.

Simple Cracker Snacks

Tired of snacks that get your keys messy? Seriously, think cheesy poofs. The orange cheese-like substance that makes both you and your keyboard look like Oompa-Loompas! Here's a non-color changing experience for you. Um, I mean unless you're into that kind of thing. If so we can talk food dyes!

For a salty, crunchy snack that won't make a mess in your keys, follow this simple recipe.

What you need:
8 Crackers (the round wheat ones).
Cream cheese.
Cucumber slices (Sometimes I like to switch it up and use Roma tomato slices or cherry tomatoes that are cut in half).

Just schmear a little cream cheese on each cracker and top with the cucumber or tomato. It's simple, but really good.

Want a little more? Add a little sprig of fresh dill, or fresh chives to each cracker. Yum!

Salami Lovers Unite!

Like salami but don't know what to put with it? Here are three tasty treats to choose from!

Make your own sandwich nubcake!

1. The Classic Italian Hero

What you need for a kaiser roll sized sandwich:
1 Fresh kaiser roll (usually in packs near the deli counter, or you can often purchase them individually)
2 Slices of thinly sliced salami (I recommend Genoa salami.)
2 Slices of ham (Smoked Ham is a good choice, Cappicola is better.)
2 Slices of Provolone Cheese
1 Slice of Mortadella (this is like spiced bologna)
1-2 slices of fresh tomato
1 piece of lettuce
A few rings of raw onion

Dressing: Olive Oil/Vinegar or Italian Salad Dressing

2. Salami and Cheese Sammies!
3 Slices of Genoa salami.
2 Slices of cheese (Provolone, American or Swiss will taste great!)
2 Slices of your favorite bread. For this sandwich I recommend a good rye.

Dressing: Choose from a Brown Spicy Mustard, Italian Dressing, Oil/Vinegar, or even a schmear of cream cheese! The cream cheese helps cut the salty flavor for those who find salamis to taste salty.

3. Salami and American Crackers!
6 crackers (saltines or the round wheat crackers)
3 slices of salami
3 slices of cheese

Step 1. Rip each salami and cheese slice in half. If you can about how it looks use a knife! XD

Step 2. Fold each cheese half on top of a salami half.

Place on each cracker and enjoy! If you'd like you can add a cracker on top or leave open. Also, for a little extra, schmear a little bit of cream cheese onto the crackers before you place the meats.

Which spices you should always have on hand

There are so many spices out there that it can be overwhelming to begin choosing what you should buy to stock your shelves. Many spices are specific to cuisines, so don't buy them all until you know more about what you like to make. For instance, if you are in love with Indian cuisines (I am!) be sure to add curry powders to your lists!

However, there are some spices that are just great to keep around in practically all kitchens. Salt and Black Pepper are staples in most homes, but let us add a few to that list.

If you do not already have these, be sure to pick some up or buy online. Depending on the spice you are looking for, you may not be able to find them easily at a local grocer. No worries, the ones I am suggesting here are easy to find!

Make sure that you have: Oregano, Sage, Basil, Garlic Powder, Dried minced Onion, Parsley, Chili Powder, Cracked Red Pepper, Cayenne Pepper, Cinnamon, Paprika, and Ground Cloves.

If there is a spice on that list that you do not like, do not buy! Also, spices are better when they are fresh, so if the store only has some that has been gathering dust find a new spice store! There are many jars of spices that will grind the spice as you use it. Grinding your spices will often lead to more flavorful dishes!

Also check out the post "Spice it up with Catyra" for more basic spicing ideas.

Don't Forget Your Veggies!

Okay, the truth of the matter is that if you are not supplementing you gaming time with some exercise, this sedentism will help your waistline grow. Not good. Not good at all! So fight back with some veggies!

Instead of grabbing the chips or cookies, grab some fresh veggies the next time you're at the store. To make this an easier snack selection when you're at home, buy the pre-cut veggies (usually it's celery, bell peppers and baby carrots). Although these are more costly than if you cut them yourself, you are less prone to grow mystery molds and science experiments in your fridge!

If you are willing to cut the veggies yourself, I recommend grabbing celery, cucumbers, baby carrots and even a jar of black olives (pitted).

For dipping, low calorie ranch dressing hits the spot. Try mixing it up, so that the veggie experience does not taste routine!

Quickee Tasty Quesadillas

Mmm...toasty, delicious melted cheese tortillas.

Quesadillas can easily be made at home. I will teach you two ways to make these treats without buying a quesadilla maker!

What you need:
1 Package of burrito sized flour tortillas.
1 Package of shredded Cheddar cheese (Mexican blend and other Cheddar blends are recommended for extra flavors.

This will make a very large quesadilla, enough to share!

**Optional Spices** To give your quesadilla an added zing, add a few light shakes of garlic powder and chili powder. It's deeeelicious!

The preparation is the same for both ways that I suggest cooking the quesadillas.

Step 1. Take out 2 Tortillas and place one on a plate.

Step 2. Add cheese to pretty much cover this tortilla.

Step 3. If you are adding the recommended spices, do this now. Also you can add some cooked chicken (a small handful) and/or onions (thinly sliced) at this time. Cover with the second tortilla.

Step 4. Cooking Options:
Option 1: Grill in a 10" pan (do not grease the pan.) The cook time is approximately 4-5 minutes. Be sure to flip the tortilla half way through and cover the pan to melt the cheese faster.

For optimal results heat the pan when you are preparing the tortilla with the cheese. Then cook at a medium to higher heat for the 4-5 minutes. If your tortilla is smoking, turn the heat to medium.

The benefit of cooking the tortilla in the pan, is that the tortilla itself will crisp on the outside. This will give it the yummy grilled texture.

Option 2. On the same plate that you prepared the tortilla, place the plate into the microwave and cook it for 1.5 minutes, or until the cheese in the center is melted (the center of your tortilla should be hot, and you can often see it bubble while the microwave is on).

Final steps:
Step 5. Cut the tortilla in half, placing one half on the other. The cut the 2 halves with 5-6 even slices.

Serve alone or with a dip! Salsas, Cream-cheese based and some sour-cream dips taste fantastic with this snack. I will offer some dip styles soon!

Nubsauce

This is tomato sauce on the go! This is very similar to my corn syrup free journey, but as an added bonus for your sauce it has grilled garlic and onions. Yum!

What you need:
1 can unseasoned tomato sauce. (Why? Because so many have corn syrup...which is blex for your body!)
1 medium onion chopped.
2 cloves of garlic minced.
1.5 tablespoons of olive oil.

**If you have some fresh veggies like bell peppers chop a little and throw it into the sauce!
Spices: Salt, Pepper, Parsley, Basil.

If you like a chunky style sauce, add a can of Italian seasoned tomatoes. These are carried in most grocery stores.

Step 1. Put the olive oil mince garlic and onions into the saucepan. Cook these at a medium heat until the garlic browns. This will be pretty fast.

Step 2. Now that your garlic is browned, add the can of tomato sauce and if you had some extra veggies. Stir.

Step 3. Let the sauce simmer at a low to medium temperature for about 15-20 minutes. Be sure to use a lid as tomato sauces like to pop their bubbles and make your kitchen a mess! Stir occasionally.

Step 4. Season to taste. ** Remember** It is easier to add than remove spices, so be conservative in you shakes until you're more comfortable cooking.

Taste often! This is the benefit of being the chef. ;) Make sure that you like how it tastes before serving to others!

Noob-Proof French Onion Soup

Onions melding with beef brothy goodness! This one is so easy that the most novice cooks can create a tasty, yet fairly delicate soup.

What you need:
1 can of low sodium beef broth (you can find this in any grocery store's soup isle).
1/3 of a medium onion sliced into thin rings.
1 Handful of croutons. I have small hands, so guys maybe just a half of a handful for you!
A pinch (but a generous one) of shredded mozzarella.

Step 1. In a saucepan heat the broth and onions, bringing to a boil. Reduce heat to medium and cover.

Step 2. Wait about 10-15 minutes. Let the onion flavor mesh with the broth while you are completing a daily or two.

Step 3. Pour your soup in a bowl and add the croutons and mozzarella.

Step 4. Return to your game and pwn the ganker who killed you when you were afk.

Chicken Soup made Easy!

Now I bet you're thinking that soups are hard to make. There are so many canned choices in the store that you're thinking "why bother?" I am here to tell you that is dead wrong! If you make this soup not only will you have a ton of great tasting homemade soup now, but you'll have some for later too!

Also, since we are not going to use the whole chicken that you boil you can save the rest for an even faster meal to make tomorrow or the following day. Think chicken fajitas, chicken salad, or some other tasty meal! A little extra work today is going to make tomorrow easier. So plan to make this soup before a raid or heavy game night, so that night is free for fun!

What you need:
Small chicken (thawed if it was frozen).
1 large soup pot.
1 bag of frozen veggies (I like using the stir-fry veggie mixes).
1 bag of frozen corn.
1 package of noodles (wide or extra wide egg noodles are great in this soup).
1 large onion (chopped).
Spices: oregano, basil, garlic powder, salt, pepper

Step 1. Place the unwrapped and rinsed (cold water) chicken in the pot. Sprinkle some pepper onto the chicken, pretty much coating the surface in a thin layer.

Step 2. Fill the pot with water (leave about an inch of space from the top) and add a few shakes of salt. Cover and bring to a boil (this will take about 20 minutes). Reduce the heat to medium and let the chicken cook (45 minutes to an hour).

**Note** The longer you cook the chicken the easier the meat with come off the bone. If your meat is still pinkish, it is not cooked!

Step 3. When the chicken is finished cooking, carefully remove it from the pot and place it in to a large bowl or an deep dish. Remember if you cooked it longer it will begin to break off while you are trying to get it out of the pot. Skim the top of your broth with a slotted spoon. Add half the bag of frozen veggies, the chopped onion, 1/2 a cup of the frozen corn, and 2 large handfuls of noodles.

Season with your spices to taste.
** Remember** It is much easier to add seasoning than remove it, so be conservative (a shake or two of each) until you get a better feel for cooking.

Step 4. Cover, but leave a little venting space.

Leave the chicken to cool for about 20-30 minutes.

Step 5. After the chicken is cooled quite a bit, pick the meat off the bones (should pull off easily with your fingers). Be sure to remove the bones and skin! Chop into nice chunks. Put half of the chopped chicken back into the soup. With the remainder of the chicken, wrap it up and put it in the fridge for another meal.

Step 6. Let the soup cook for another 30 minutes or so. Taste a little to make sure that it is seasoned to your liking.

If you'd like to top with a little cheese Mozzarella, Pepperjack and Cheddar are good choices. Add to the soup in the bowl, not the pot!

This recipe is going to make a full pot of soup. If you do not want to eat it all in the next few days (will last about a week in the fridge), let the soup cool and store it in some Tupperware containers that won't spill in your freezer.

**You can also substitute the noodles for 2/3 cup of cooked rice.**

I will post a Southwest style twist to this recipe soon!

Easy Philly Cheesesteaks at home!

The real key to any great sandwich is using fresh materials. On your next trip to the grocery store check out the fresh bread section near the deli counter. Gently squeeze the bread that you are thinking about purchasing to make sure that it is nice and fresh. The best of these breads might temp you to tear of a piece before you get home, but resist! It will be worth the wait.

If you love whole wheat, grab some of the fresh whole wheat club rolls. These will work just as well as the white breads, and makes it onto my favorites list.

What you need:
Fresh loaf of French or Italian bread, or fresh club rolls (the long rolls).
1/2- 1 1/2 lb of thinly sliced roast beef, or you can use the frozen sliced steak meats.
1/2 an onion (sliced into thin strips)
Shredded Mozzarella cheese to melt onto the steaks. Want to try something different? You can substitute the Mozzarella with Cheddar or American Cheese if you choose.

**Optional** Add some grilled mushrooms!

Step 1. Grill the meat on one side.

Step 2. When the underside is cooked (you can begin to see the edges browning before you flip), turn the meat over and with the spatula move the meat closer together on the pan. Do not worry about every slice laying flat.

Step 3. With the space that you have made in the pan, add the sliced onions to lightly grill them. If you like you onions softer, start cooking them earlier with the meat. **If you are adding mushrooms put these in now with the onion.

Step 4. Add the cheese of your choice. Cover and let the cheese melt (about 1 minute).

Step 5. Serve the cooked meat on your fresh bread.

Don't forget to make one of these tasty treats for your loved ones!

Tasty Turkey Melt

Sandwich melts hit the spot for lunchtime cravings. This melt is going to leave you wanting to make a second!

What you need:
Two slices of your favorite bread (I suggest rye or whole wheat).
3-4 pieces of thinly sliced turkey.
2 pieces of Swiss cheese (you can substitute this with American, Cheddar, or Pepperjack).
A dab of ranch dressing.
A little butter or cooking spray to prevent the sandwich from sticking on the pan.

Step 1: Grill the turkey in the pan on medium heat.

Step 2. Put the bread on the greased pan, letting the first side toast.

Step 3. Flip the bread and put half of the grilled turkey on each slice of bread. Add a piece of the cheese of your choice to each half.

Step 4. Cover with a lid for about 30seconds-1.5 minutes (until cheese is melted). If the bread is toasting faster than the cheese is melting reduce the heat to low).

Step 5. Remove the sandwich from the pan, but do not close it yet!

Step 6. Put a dab of the ranch dressing on one side of the sandwich. Close, and cut the sandwich.

If you like pickles, put a wedge on the side for that deli experience.

Missing Thanksgiving? Add some grapes slices to this melt. Cut about 8 grapes into thin slices and substitute the ranch with a little honey mustard dressing. Yummy! It's like having your cranberry sauce without the boiling!

Pizza 101

It's 4am, and all the pizza places are closed, but you still want pizza. If you have bagels (or rolls), tomato sauce and some mozzarella cheese, then you can make this easy make-shift snack.

Simply spread some sauce (not too thick), and coat with mozzarella cheese. Add your favorite toppings too!

For best toasting results use a toaster over. If you do not have one you can either broil for about 3-4 minutes (stick a piece of foil underneath to catch the drip), or toast your bread before adding the rest, then microwave to melt the cheese.

Superbowl Mexican Layered Pie Dip

This is a sinfully yummy concoction! If you want a salty snack to share with friends, then this is the dip for you! It is not recommended for those who are dieting, but hey the Superbowl is once a year!

The recipe below is for a single pie sized dip. If you have more than four people, I'd recommend making two pies, which really you just need to make sure that you have an extra package of cream cheese. Make things extra special by making two slightly different pies (ex. one with corn and one with black beans). Yum!

What you need:
1 package of cream cheese, softened. 1/2 a can of vegetarian re-fried beans.
Your favorite salsa. Shredded cheddar cheese (or a Mexican blend).
Bag of Tortilla corn chips.

Preheat the oven to 350.

Step 1. In a pie tin sized pan, spread the softened cream cheese evenly.

Step 2. Spread 1/2 the can of re-fried beans.

Step 3. Continue by adding a layer of your favorite salsa. Do not spread this layer on thickly or your dip may get a little watery.

Step 4. Top with a layer of shredded cheddar cheese.

Step 5. Bake at 350 for about 15-20 minutes (until cheese on top is fully melted).

Serve with Tortilla corn chips and enjoy!

**Tips** If you have any frozen corn toss about a handful in to the salsa layer. This will add a little extra texture to the dip. If corn is not your thing, but you happen to have cooked black beans (canned is great) you can substitute the beans for the corn.

Simple Fruits, Great Taste!

Summer sweets can begin with a simple fruit. Choose your favorite melon (for this I love watermelon--cantaloupe and honeydews will work as well), add some pineapple and shredded coconut for a healthier alternative to chips.

Not only is this delicious dish simple, but the juicy melon is refreshing.

Remember to choose fruits that are in season. This will save you money and often the fruits taste better too!

If you are entertaining, take out your melon-baller. This will make this an attractive dish!

Skip the cola and go fruit!

WoW Ziti Dinner

Busy pwning noobz and your wife is going to be home soon? Here is an easy meal that you can make to impress her when she gets home. You will need about an hour, but no worries! That is mostly for cooking time, where you can be in WG or running around in Ulduar!

What you need:
Box of Ziti noodles.
Can of your favorite tomato sauce (26 oz)
15 oz (small container) of Ricotta cheese
Mozzarella cheese, shredded

Step 1. Grab a large pot and fill 3/4 of the way with water. Add a little salt, cover, and bring to a boil (this will take about 10 minutes to boil). Return to WoW and make sure that you have all your buffs, and start fight.

Win or lose on the boss, run into the kitchen and go to Step 2.

Step 2. Pour a box of ziti noodles into the pot and mostly cover (leave enough space to vent and prevent it from boiling over). Cook for approximately 8-10 minutes. About half way through stir the noodles to prevent clumps. Return to the game. After the full 8-10 minutes is up, test a noodle to make sure that they are soft.

Step 3. Drain the pot. Add some cold water to prevent the noodles from sticking to the bottom. Squish them, and drain them again.

Step 4. Add a small container (15 oz) of ricotta cheese. If you have the large container use about 1/2.

Step 5. Add half a can of tomato sauce.

Stir contents evenly.

Step 6. Using a large rectangular baking pan (9.5"x13" or so), pour noodles and spread evenly.

Step 7. Coat with a layer of shredded mozzarella cheese.

Step 8. Sprinkle with a little garlic powder and a little parsley and oregano.

Step 9. Bake at 350 for 15-20 minutes.

Enjoy! Your wife will love that you cooked more than mac-n-cheese, and you'll be happy that you mostly made your way through an instance!

Tasty Teas

Long day at work? Need to unwind, but can't leave the office? Try a delicious tea to help calm your nerves and help you hang in there. You will be amazed at how quickly the daily humdrum melts away with each sip.

Two of my favorite picks are Bigelow's Vanilla Caramel and Boston Tea Company's Orange Spice. Both of these contain caffeine, so don't drink them before bed.

Journey for corn syrup free Tomato Sauce

Concerned with all the corn starch and corn syrup added to your favorite tomato sauce? Here is an easy way to make your own sauce that is corn syrup free!

Let's face it, we're all busy and don't always have the time to start completely from scratch with our cooking. With a little wrist work to open two cans and chop some onion, you're well on your way with this recipe!

Start with the unseasoned cans of tomato sauce from your local grocer. Although most of these do not have corn syrup added, it is a good idea to check the label. Most grocers will also carry seasoned canned tomatoes. For this recipe, grab a can of Italian seasoned tomatoes (usually it will be basil and garlic).

When you get home chop a medium sized onion, and add it to the tomatoes and sauce into your favorite sauce pan. Add a pinch of parsley, oregano, black pepper, and if you have it, chop half of a bell pepper and toss that into the sauce too. I love garlic, so I usually add 2 minced cloves. If there is no sodium added to the canned seasoned tomatoes then salt to taste, but I recommend checking the sodium content first.

Heat the sauce on medium heat, stirring occasionally, until the onions are a little soft (approximately 15-20 minutes). The nice thing about this recipe is that you can let the flavors meld as you are preparing the rest of your meal.

For the more adventurous types, add a teaspoon of rubbed sage to give your sauce a pleasant earthy flavor.

**Tip for seasoning** Instead of just shaking the oregano or other dried seasonings into your sauce, first crush the seasoning in your fingers to release their aromas and flavors.

Mmm Coffee!

Tired of the same old jo? Here are a few ways to spice up your morning java without having to make an extra trip to the coffee shop!

Did someone say cinnamon? Not only does cinnamon smell and taste great, but it was one of the spices that encouraged world exploration!

Instead of traveling the world looking for the next perfect spice, just add a few shakes from the container that is already in your cabinet. Add the cinnamon into your grinds and presto! It's not just for apple pies anymore!

Another favorite is to add a little cocoa powder in with the grinds. It's time for mochas for pennies on the dollar! Just don't add too much powder as this can clog your drip canister and make a mess. Sadly, that is experience talking, and as Oscar Wilde said "Experience is the name every one gives to their mistakes."

For you more adventurous types, add a little pinch of anise seed into your grinds for the licorice taste. Not only will you aid your digestive tract, but your kitchen will be filled with its warm scent!
